Quick and Easy Chicken

Simple evening meal for busy people

INGREDIENTS

    8 medium potatoes - wedged
    2 large red onions - wedged
    6 garlic cloves - halved
    2 tbls chopped fresh rosemary
    2/3 cup pitted olives
    1 tbsp spice rub of choice
    2 small lemon - sliced
    8 deboned chicken thighs
    1/2 cup sundries tomatoes
    2 cups baby tomatoes
    1 red pepper
    Salt and pepper
    1/4 cup olive oil 
    1/4 cup vegetable oil

MAKING THE MAGIC

Preheat oven to 220 degrees Celsius

Chop all vegetables into chunks, potatoes can be wedged

Rub spice into chicken

Throw all ingredients into a large shallow pan and mix

Stick in the oven for 45minutes, if not cooked through leave for another 5 to 15 minutes.

Season

Serve with Danish feta if desired- leave out if you want this dish to be dairy free
