Walnut, Tomato and Olive Salad

INGREDIENTS

    2 punnets cherry tomatoes
    1/2 cup roasted walnuts
    16 olives-pitted
    2 cups baby rocket
    60 g shaved parmesan
    1 tbsp balsamic glaze
    2 tsp lemon juice

    Garnish with tomatoes on the vine

MAKING THE MAGIC

To plate up, place rocket on the plate, followed by cherry tomatoes, walnuts, olives and shaved parmesan.

Mix the balsamic glaze and lemon juice together, drizzle over the salad
